Chicken couscous from the Green Egg

Requirements
- Barbecue
- Stainless steel grill
- Cast iron pan
Preparation
“This is comfort food from the barbecue. Everything in one pan, full of flavour and perfect for stress-free cooking for a group.”
Step 1
Briefly grill the chicken thighs at 200 °C (approx. 2 minutes per side) to brown them nicely.
Step 2
Chop the vegetables into pieces.
Step 3
Heat a cast-iron pan and add all the ingredients, including the chicken and spices.
Step 4
Leave to simmer for approx. 20 minutes at 180 °C until the chicken is cooked through.
Step 5
Meanwhile, prepare the couscous according to the instructions on the packet.
Step 6
Serve the stew with couscous, naan and fresh coriander.
